Corn & Garbanzo Bean Salad
Ingredients:
1 can whole corn, rinsed and drained
1 can garbanzo beans, rinsed and drained
1/2 cup diced roasted red bell peppers
1/2 cup diced fresh mozzarella
1 large handful fresh cilantro, chopped
1 large handful flat-leaf parsley, chopped
1 small shallot, finely diced
3 tbsp white balsamic vinegar (or lemon juice)
4 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
Instructions:
To make the dressing, whisk together vinegar, oil, salt and pepper. Set aside.
Combine everything else together in a large bowl, then add the dressing and mix to combine. Season to taste with additional salt and pepper.
Cover and place in the fridge for 30-40 min so all the flavors can come together.
